Rawa Dosa (with curd & rice flour)



Rawa Dosa (with rice flour & curd)

Makes: 5 - 6

You will need

1 cup ( 100 g ) rawa ( sooji )
1 cup ( 100 g ) curd
1 cup rice flour
1/2 to 3/4 cup water
1 onion, finely chopped
1 spring curry leaves, finely chopped
1/2 teaspoon salt
1 tablespoon oil / ghee

Method

Mix rawa with curd, rice flour, chopped onion, curry leaves and salt. Make a batter of pouring consistency by adding water (1/2 to 3/4 cup). Keep aside for 1 - 2 hours.

Heat a heavy - bottomed wrought iron griddle or non stick dosa pan on a medium heat.

Grease with little oil / ghee. Reduce the heat to medium.

Make the dosa by placing a ladleful ( approximately 100 ml ) of batter on the centre. Spread evenly by circular rotations ( 2 - 3 rotations) using the base of the ladle. Sprinkle a few drops of ghee / oil ( optional ) on top. Cover with a lid and cook for 2 minutes.

Turn other side also and cook on a medium heat till golden color.

When ready, carefully remove with the help of a thin spatula. Serve hot with coconut chutney / coriander tomato chutney /sambar / chutney powder / pickle.



Homemade Vodi / Crackers / Rice Fritters ( before frying )

One of my Maayi (aunt) gifted us a packet of homemade vodi. Those were crispy, crunchy & tasty !!!!!

These crisp and crunchy wafers are deep – fried delights that are eaten along with a South Indian meal. Vodi / Vadams are usually made out of rice paste and nowadays, they come in some exciting colours that include a bright fluorescent green and festive orange, apart from the usual white ones.
